Top chef Alex Bond inspires students with contemporary cuisine


Michelin-trained chef Alex Bond took time out of his busy schedule last week to work alongside trainee chefs at ncn, to cook a five-course meal for the public.

The sell-out evening, held at the College’s Adams Restaurant & Brasserie in The Lace Market, saw guests enjoying a special five-course tasting menu created by Alex and prepared, cooked and served by ncn students. Dishes included: charred hispi, almond, and parmesan; followed by lamb, miso aubergine, and black sesame; and sea buckthorn, toasted kombu, and chocolate to finish.

His modern British style cuisine and his love of cooking with vegetables introduced students to new ingredients and a whole new way of cooking. Alex and his sous chef Liam Sweeney spent the day working alongside Level 1 Professional Chefs Diploma students in preparation for the evening, with Level 2 and 3 students joining them later in the afternoon to cook, plate and serve to a packed restaurant of Nottingham diners.

Level 1 student, Claire Chocholko, 33, from Broxtowe, said: “It was really exciting working with Alex and it was a great experience working on such a unique menu. One of the jobs I was given was to prep the herbs using a technique I’d never tried before. I blended the herbs and oil together and then wrapped them in muslin which were then hung to allow the flavours to infuse. I also got to experience using a range of ingredients I’ve never cooked with before, like sea buckthorn, katsuobushi and miso. Alex’s style of cooking is so different and modern and it was really fun to be part of his team for the day.”

Alex has worked in Michelin-starred restaurants since the age of 19, working with renowned chefs like Nottingham's Sat Bains and Richard Turner, at his top Birmingham restaurant Turner's. Now, the talented chef is set to launch his new solo venture next month with the grand opening of his restaurant Alchemilla, set in a former Victorian coach house on Derby Road.

Alex commented: “I was really impressed with the level of skills the students demonstrated and they had bags of enthusiasm; which was great to see. As a student I would have loved to have done something like this but there just wasn’t the opportunities. If I can share just a little bit of what I’ve learnt over the years with these young trainees then that’s fantastic, and I hope they continue to progress as chefs because it’s such a rewarding industry to be part of.” 

Lecturer, Elliot Richardson, said: “Experience like this is invaluable for our students, particularly working with somebody of Alex’s calibre with such a distinctive style of cooking and so much fantastic industry experience. We're so grateful to Alex for taking the time out to support our students and we wish him every success for his new restaurant.”
