Daniel Callieu, Level 2 Professional Chefs Diploma student, is the proud owner of a silver medal following his success in the ‘City & Guilds 7100 Challenge’, at the national catering industry exhibition ‘Hotelympia’ on 2 March.
After winning an internal College competition, Daniel went on to create the classical fish dish ‘Sole Marguery’ in an open theatre in front of high-profile industry judges and numerous visitors to Hotelympia. He competed against student chefs from across the country.
Gordon Lang, ncn Chef Lecturer, supported Daniel through the competition. He said: “The standard of the eleven entrants was extremely high so Daniel was up against stiff competition. He was professional throughout and we are all very proud of his achievement.”
The competition brief was to produce a 'classical dish' using flat fish. Daniel made fillets of poached sole with a white wine garnish, shrimps and mussels.
