Junior Pastry Chef Daniel Coles receives his certificate
from Lee Clarke (l) and Mark Costello (r), Whitbread
A group of 27 budding chefs graduated from the latest Junior Chefs Academy (JCA) & Pastry Chefs Academy (PCA) on Saturday 21st March. The 14-16 year old students spent nine Saturday mornings being trained in either food preparation and cooking techniques or hot and cold deserts and pastry products in the ncn Clarendon training kitchens.
The course culminated with the graduation event in which the young chefs used the principles they learnt during the term to prepare a 3-course lunch for seventy guests under the watchful eye of their friends, family and sponsors Compass Group PLC and Whitbread PLC via a video-link.
This JCA programme was developed by Compass Group PLC to attract and develop young talent into the hospitality sector. An ongoing programme with ncn, it provides young people at school with a unique opportunity of testing out their potential career path in a realistic working environment.
Recruitment is now underway for the next Junior Chefs and Pastry Chefs and interested year 10 and 11 pupils should apply through Emma Woods at ncn on 0115 910 4665.
